Pasta e Fagioli
3 cloves minced garlic
2 tablespoons olive oil
1 carrot, peeled and finely chopped
1 onion, chopped
2 staks celery, chopped
2 stems fresh rosemary, whole
several sprigs fresh thyme..leaves stripped form stems and chopped ( about 2-3 tablespoons)
salt and pepper
3 cans chicken broth
1 can cannellini beans
1 cup ditalini pasta
grated cheese

heat garlic and oil in deep pot
add vegetables, rosemary, thyme, salt and pepper
cover and cook 5 minutes, stirring a little
add broth, bring to a boil
add beans and ditalini
reduce heat to simmer and cook 10 minutes until pasta is done
serve with grated cheese on top

peanut butter brownies

pan of brownies (either homemade or from a mix )
a few tablespoons of peanut butter (depending on how big of a pan you made)
8 oz or so of chocolate chips

melt the peanut butter in a bowl in the microwave
pour and spread on top of the brownies while they are hot
put in the fridge to get hard

melt the chocolate chips in a bowl in the microwave
pour on top of the peanut butter and spread to cover
put in fridge to get hard

Spinach Dip ( in the crockpot)

2-10oz frozen spinach
4 oz cream cheese
2 tablespoons minced dried onion
1 can cream of mushroom soup
1 jar jalepeno or cheese wiz ( or regular if you can't find this)

thaw and drain spinach, squeeze water out
combine everything in crockpot and cover
low 2 hours
stir during cooking
keep warm

( i always double this recipe for a get together/party)
