do you have a recipe for Potato Bacon soup?

That is one of Randy's favorites and he always orders it if a restaurant has it on the menu.

Yeah we buy that too but Randy wants to make it homemade. I don't have a recipe although I did find a few on the web but they seemed so involved for such a simple result.

This is my mom's very sim[ple recipe. I know some people like to add other veggies and things to their but I like it basic. I always make a large pot so we have leftovers.

I peel about a five lb bag of potatoes normally, slice them lengthwise in fourths and them chop them into peices maybe about 1/4 inch long. I rinse them a time or two ( cook them in a pasta pot to make draining easier) and then put in just enough water to cover them. Then I either add a small onion minced or a couple of small handfull of dried onions. I also add a small handful of dried parsley and some garlic powder. I boil them till soft (not to soft, you don't want mashed!) When they are done I drain them and set them aside. While they are cooking I use some cooking scissors to cut 1 Lb of maple flavored bacon into bite size peices and I cook it till done but not crispy. When all is cooked I drain the bacon and dump it into the pot of potatoes. Then I usually add some more onion, parsely and garlic as well as 1 quart of Half n Half. If the potatoes have had the chance to cool then I turn a burner on low and slowly heat it up while stirring. Normally my potatoes are still nice and hot and just adding the half and half heats it up plenty.

I love lot's of garlic in mine but Jacob dosn't so I've been cooking it without garlic and just adding some to my own bowl later. I would think it would be very simple to add other flavors and things you like to it, after all the garlic is our addition.

OMG that is the perfect recipe Randy is going to be sooooo happy. It sounds like what he liked so well at a local restaurant here it didn't have all sort of spices and veggies added to it.

I think the maple bacon is the key too never thought of that!
