Default What would you cook?

My stepson and his gf are coming over on Sat & I don't know what to make. Usually we end up with BBQ but I want something different. It can't be anything too complicated because I'm not a very good cook. She is Mexican so I don't want to make anything Mexican-ish because there is no way it would be as good as what her mom makes!

Any suggestions?

Chicken parmesan? That's basically breaded baked chicken breasts with some cheese and pasta sauce thrown on top in the last few minutes. Then serve over spaghetti. Have with salad and garlic bread. Easy but delicious.

I have a simple recipe if you want it.

I like that idea. The only other thought I had was (depending on the weather) some stew or a nice warm soup.

I'm a horrible cook anymore, so not much help. A roast and some mashed potatoes and root veggies is always easy and tasty too.

Good luck and have fun! Is this a serious girlfriend, like a "meet the parents" dinner, or just a girlfriend that you all know already?

Yes, this is a serious relationship (baby due in Dec) but I don't expect it to last.

Or Lasagna??? not as simple as the chicken though, but it can be frozen.
