Anything you can make without meat is cheaper! I am a vegetarian, DH is not, so my meals are always way cheaper! I make alot of mexican food- tacos, taquitos, burritos, using refried beans and cheese which is pretty inexpensive. Quesadillas are good too as well as grilled cheese. I also make a mac and cheese from scratch where you use milk and flour and cheese for the sauce- pretty easy and cheap. Of course you could always add meat to any of those recipes...

Deanna - honestly I like just about everything. I love pasta. I haven't been making much with pasta lately because Cora won't eat it. We do a lot with rice and chicken.

I make a cheap enchilada casserole. I think I got the receipe from here, but I use a can of white beans instead of meat.

mmmm enchilada casserole! YUM!! How do you make that? I know my hubby and I would love it- of course I would make his with chicken!
