I love that pizza/calzone dough! It works great with whole wheat flour as well. I grind it up fresh while the yeast is dissolving. To make it into pizza, simply press it into a cookie sheet for a big rectangle pizza. Cook it for 10 min, take out and put on your toppings and put it back in for a few minutes to cook the toppings and melt the cheese. We like the cheese bubbly, so we turn on the broiler for 2 min to brown the top. We cut it into squares or triangles and the girls love it. They also like decorating the pizza with its toppings!
ETA: I just remembered an adaptation we've been doing lately and I forgot when I made it tonight! Put 2-3 cloves of minced fresh garlic in the dough when you mix it up! Its fantastic!!!! We also double the recipe a lot and make 2 pans of pizza. It reheats up great for lunches over the next few day!
Also when I was in college and very poor so I couldn't afford toppings, I used to make the dough all the time and simply put cheese on the top for "breadsticks". I just cut it up into sticks and it was sooooo good! It was my cheap, go to recipe for study group snacks at my appt!
Homemade soups are super easy, very nutritious and so yummy! I do have a few more expensive recipes I use for a $10 pot of soup, but most of what I make is in the $4 or less variety. I always keep those huge Costco bags of frozen peas and corn in the freezer add handfuls to just about anything I make. Take 2 chicken breasts (I like to cube it and fry it in a Tbsp of olive oil) or 1 lb of hamburger. Cook it well with a few cloves of minced garlic and a chopped up onion
if you like that. Add Better then Bouillon (chicken or beef flavor depending on what you are making) and fill the pot 1/2 way or so with water. I add dried parsley for color. Then add a starch. I use cubed potatoes a lot, but rice, lentils or noodles work super well too. For noodles I used to make them, but I've been enjoying fetuccine noodles broken up. My girls love to break them up for me for the yummiest chicken noodle soup! You can add other longer cooking veggies you like such as carrots with the starch ingredients. You can do more then one starch as well. We like potato and rice a lot. When the starch ingredient is cooked fully,take it off the heat and add a handful or two of peas and corn or any frozen veggies your family likes. The frozen food helps to cool down the soup and cooks instantly without loosing its nutritional value by being cooked for a long time. We serve this soup up by itself or with grilled cheese sandwiches. Mostly by itself though! There is always enough left over for lunch the next day and that's so nice to have a nice lunch. I ate chicken and potato soup for lunch just today! We live off of basic soups like this all winter.
Porkchop casserole is one of the first meals my mom taught me to make when I was 8. Get on sale pork chops. You can use either the cutlets or the ribblet style. Just pick up the cheapest option or what your family likes! Pan fry the meat to brown it a bit. You aren't trying to cook it, just give it some flavor. Then throw it in your crockpot or a baking dish. Top with sliced potatoes. Then slice an onion and add the onion in rings on the top. Mix a can or two (depending on how much you are making) of cream of chicken soup with 1/2 a can of milk per can of soup. Mix well and pour over the top. Cook in the crockpot all day (6 hrs or so) or in the oven at 400 for a hr or so until the potatoes are soft and the meat is fully cooked. Its been awhile since I did it in the oven.
I also get the huge packs of the pork riblett things on sale, pan fry the whole lot and freeze it into what we'll use for a meal. I take them from frozen and throw them in the crockpot for this meal. It still turns out great!
Homemade mac and cheese from a roux is quite easy and sooooo yummy!
Breakfast for dinner can be very cheap! We do whole grain pancakes and eggs or breakfast burritos quite often.
If you do pancakes make up twice as many as you need and warm up for breakfast or lunch over the next few days. My girls love that!
Taco's or burrito's are very easy and cheap. My girls love pizza burritos! Put your sauce, cheese and toppings in a totrilla and bake at 350 for 10 min. These are sooo yummy! They freeze beautifully as well and I made up a ton as freezer burritos as a cheap and healthier version of buying them. My
DH takes them for lunch at work.
