I'm glad I'm not the only one. I HATE cooking for just me and the kids. My kids eat nothing.

Usually for dinner if DH is at work they have yogurt, cheerios/chex mix, etc...they'll eat some fruit.

The only hot foods they eat are noodles, mac and cheese, pizza, basically anything plain and white. One of the two will eat an occasional chicken nugget.

Oh, Milo loves the Campbell's soup Cars chicken noodle. DD will eat the Spaghettio princess shapes (yuck).

Oh and applesauce is always a sure bet.

I'm home at night alone with the kids. My dh also works a different shift. My kids are fairly good eaters though and I do try to cook a balanced meal every night. We do the occational grilled cheese with tomato soup or something. Will they eat chicken cooked in the crockpot? Cook it in a cream soup (mushroom or chicken) and it comes out really tender and yummy. Serve it with rice, noodles or something like that. When you do buy mac and cheese try to get the whole grain, that's at least better than the regular and you can't tell much of a difference, especially if you add an extra slice of cheese or something. Try making your own chicken fingers, you at least know that you are getting real quality chicken. Sometimes I wonder when I get the premade

Oh and the tortilla thing Susan suggested sounds good and easy. Also you can make them a smoothy with yogurt and fruit. That gets a lot of good stuff into them too.

Josh is an extremely picky eater. I feel like I'm trying to buy a used car every night the way I negotiate with Josh. I've always offered him a balanced meal as well. It just made more sense when DH was home and other people were actually eating the food.

Matthew is a good eater but you can never tell what he's going to eat or not eat. It changes daily. Tonight he wanted some of my pasta salad. He ate a couple noodled and then started spitting them out.

Chicken pot pie. I buy the frozen ones for the kids and I also make them when I have time. You can put a couple of chicken breasts in the crockpot with cream of chicken soup and some veggies and all you have to do when you get home is throw it in a dish to bake with a crust.
