Default supply of pumped milk?

Ok, when you are going to go back to work/out to dinner/ etc and you want to leave your baby with alternate child care, I know all about pumping when you would normally feed the baby, etc. However, how do you get the milk to leave your baby somewhere in the first place? I read to pump when your baby misses a feeding. On the super-rare occasion that happens, I do pump, but then he ends up drinking it within the next couple days because sometimes when I'm "empty" he's still hungry. Even if he didn't, it would take me a few weeks to get enough for him to have 2-3 bottles worth. So how do you build this "supply"?

When DD was small I often found I was uncomfortably full around 4am and she'd only feed off one side so I would pump the other side then. It means getting up when you want to do nothing more than sleep , but if you can force yourself you should get the extra you need.

And when my DD started dropping a feed in the evening I'd express that milk.
