  • Since I didn't have to cook or bake anything for tomorrow because it's all spoken for, I tried my hand at a chicken cassarole.
I cook brown rice according to instructions and pan seared some chicken breast. I pot it in a cassarole with french cut green beans and mushroom soup. I added pepper, savory, and minced onions and baked at 350 for 35 minutes.

DH loved it. I was pleased too. DS tried it and ate a few bites but wasn't as impressed. Almost 2 year olds are a hard crowd.

I can make spaghetti and can make good steaks, burgers, and pork chops. This is the first time I've ever done anything so ambitious though so I'm very proud of myself especially since I didn't have to call my MIL for advice during the process. I checked about temps and times yesterday though.
I also baked some crescent rolls which DS loved.

I'm trying beefy cheesy broccoli rice on Friday night and Red beans and rice on Sunday(in the crockpot)

  • Congrats. Cooking can be either very frustrating or very therapeutic for me.
Thank you Chickie!
